Meet the Chef

Chef Juan Solorio, who has been at SWB for 19 years is your most congenial guide—teaching you how to truly enjoy and pair tequila with food, admire the kick that roasted pumpkin seeds can bring, feel his enthusiasm for the anti-oxidant rich gooseberries sourced from Central America and more.

Solorio’s spice road journey to become your Southwest food tour guide began long ago in Guanajuato and then Mexico City, where his mother pressed him into service cooking breakfast for his younger brothers when she had to go to work. From Mom—his biggest food critic to this day—his training continued with world class European chefs and a long stint making French cuisine.

Talking with Solorio is as satisfying as the Wine Me, Dine Me meal. This is a man comfortable in his own skin whose cordiality makes one suspect that a career in the hospitality industry is somehow hardwired in his DNA.

Ever congenial, it’s easy to lose sight of the fact that while he is gently schooling you on what the differences are between tequila types and such he is also supervising a busy kitchen.

You feel Solorio’s sense of food adventure and enthusiasm for Latin spicing. The Wine Me, Dine Me menu is not the same from week to week or even day to day. Two farmers markets and several local produce companies are visited weekly for new treasures to add to this meal and other special offerings at SWB.   Even though SWB is only one of eight restaurants in the Scottsdale Hyatt Regency—and Scottsdale itself has many gourmet restaurants vying for attention in the global culinary scene—it would be tempting to return for a second Wine Me, Dine Me four-course meal at Chef Solorio’s counter during a longer stay.

The Chef says his greatest satisfaction is in seeing clean plates return to the kitchen.   It’s likely you will not disappoint.
